Recipe: Grilled Peach and Pistachio Butter Salad

  • Ingredients:
    • 4 ripe peaches, halved and pitted
    • 2 tablespoons Seed & Shell Pistachio Butter
    • 1 tablespoon honey
    • 4 cups mixed greens (arugula, spinach, etc.)
    • 1/4 cup crumbled feta cheese
    • 1/4 cup toasted pistachios, chopped
    • 2 tablespoons balsamic glaze
    • Olive oil for grilling
    • Salt and pepper to taste

Instructions:

  1. Preheat your grill to medium-high heat. Lightly brush the peach halves with olive oil and grill for 3-4 minutes on each side until they are tender and have nice grill marks. Remove from heat and let them cool slightly before slicing each half into wedges.
  2. In a small bowl, whisk together the pistachio butter and honey until smooth.
  3. Arrange the mixed greens on a serving platter or individual plates. Top with the grilled peach wedges and crumbled feta.
  4. Drizzle the pistachio butter and honey mixture over the salad. Sprinkle with toasted pistachios and finish with a drizzle of balsamic glaze.
  5. Season with salt and pepper to taste, and serve immediately.
